Here is a recipe that I memorized from the Better Homes and Garden Cookbook. It's called "Greek Quinoa and Avocados". Here are the ingredients:
1/2 cup uncooked quinoa
1 cup water
2 roma tomatoes
1/2 red onion
2 tablespoons lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
2 rip avocados
1/3 cup crumbled feta cheese.
Another thing that I hate about a written recipe is when it says stuff like, "seeded and finely chopped, minced, thinly sliced," blah, blah, blah. Aren't you just going to chew it all up anyway? Who cares how it's cut up? Anyway, here's how you put it together: add the 1 cup water and quinoa to a pot and bring to a boil. Next, simmer for 15 minutes. Cut up all the rest of the ingredients and throw them in a bowl. When the quinoa is done cooking throw that in too. Done and done! Eat it cold or warm, either way this is such a tasty dish. And just so you know... we don't eat this healthy all the time. I ate a cupcake for breakfast the other day, and ate a follow-up cupcake for my post run snack.

:) That looks like a yummy healthy recipe I should try! ASAP I agree when I read things like finely chopped (time consuming things) I'm like um no thanks that takes too long plus it just gets gobbled down so it isn't worth it. That's silly that you don't like reading recipes though I'm gonna have to teach you to LOVE food! I read through recipes just to salivate especially sweets! LOVE YA SIS!
I agree with you about simplifying recipesI I have to write a recipe for a friend I really make it easy. Most of them have been cooking for years so they do it their own way

That looks delish!!! I'll have to try it. It kind of reminds of that hippy gumbo deliciousness, that stuff is addicting!
This looks so yummy! I'm trying it this weekend!
